Powder vs. Granulated — Which One Do I Want?
This is the fine powder. Milled to a flour-like consistency, it dissolves instantly and leaves no grain behind — no specks floating in a vinaigrette, no gritty texture in a cream sauce. It is also the more concentrated of the two, so a little goes further.

How to Use

Measuring: powder is stronger by volume than granulated — use roughly 1 teaspoon of powder for every 1½ teaspoons of granulated a recipe calls for. Start small.
