What "Raw & Unfiltered" Actually Means

Most supermarket honey is heated and finely filtered so it stays clear and pourable on the shelf. That process strips out the pollen, the trace wax, and the character along with it.

This honey skips both steps. It is never pasteurized and never fine-filtered, so the natural pollen and enzymes stay in the jar — and so does the flavor.


Why Wildflower Tastes Different Every Season

Wildflower honey is multifloral: the bees forage whatever is blooming across the coast at the time, rather than a single crop. The result is a deeper, more layered honey than a single-flower varietal.

It also means no two harvests taste quite the same. Color and flavor shift with the season and the bloom. That variation is the point, not a defect.


How to Use

Spoon over yogurt, toast, pancakes or fresh fruit, or stir into tea, coffee and agua de jamaica.

Use it in dressings and marinades, drizzle over aged cheese or warm pan dulce, or swap it in for sugar where you want the floral note to come through.

Heat above roughly 40 °C / 104 °F will soften the raw character, so add it at the end of cooking or off the heat if you want to keep it intact.


FAQ

My honey turned solid and grainy. Is it spoiled? No — that is crystallization, and it is normal in raw honey. It is a sign the honey was not heat-treated. Stand the jar in warm (not boiling) water and stir until it loosens.

Why is it cloudy instead of clear? Because it is unfiltered. The haze is natural pollen and fine wax, the same material that clear commercial honey has had removed.

Is it gluten-free? Yes — pure honey is naturally gluten-free.

Is it vegan? No. Honey is an animal product made by bees, so it is not suitable for a vegan diet. It is vegetarian.

How should I store it? Cool, dry, lid closed, out of direct sun. Do not refrigerate — cold speeds up crystallization. Use a dry spoon; water introduces spoilage.

Does it expire? Honey is remarkably stable and does not spoil under normal storage. Color may darken and flavor may deepen over time.


Safety note: Do not feed honey — raw or pasteurized — to infants under 12 months of age. Honey can contain spores that a baby's digestive system cannot yet handle. This applies to all honey, not just this one. Safe for children over one year and adults.
