Nutritional Benefits
Whole blue corn is a wholesome source of complex carbohydrates and dietary fiber, plus a modest amount of plant-based protein.
Its deep blue-purple color comes from naturally occurring anthocyanins, and it supplies minerals and B vitamins. Once nixtamalized with cal, its niacin becomes more available to the body.
Naturally gluten-free, vegan & plant-based, with no additives.
How to Cook
To make blue masa, nixtamalize the corn: simmer the kernels in water with food-grade cal (calcium hydroxide), let them steep, rinse well, then grind into fresh blue masa for tortillas, tlacoyos and gorditas.
Whole kernels can also be simmered into hominy or pozole. Rinse before cooking and adjust water as needed.
